We all know that we should be getting in more fruits and vegetables into our diets, yet the majority of Americans do not meet the recommended daily amounts. According to results of a 2013 national survey of 373,580 randomly chosen American adults, a whopping 13% met the recommended fruit intake and only 9% met the recommended vegetable intake!
I admit that I even have a hard time squeezing in all those fruits and veggies. And, if you are like many of my clients, it’s breakfast which is the hardest meal of the day to get those veggies in. Because of this, I asked my fellow RDN bloggers for their favorite veggie-filled breakfast recipes. It looks like veg in the morning is best paired with eggs – a great source of protein to fill you up and keep you full! I have been working hard on my end to get more fruits and veggies into my whole diet, and you’re right–breakfast gets left out during the week. I’ve taken to doing egg white omlettes with mushrooms and spinach, but I can only do that so many days in a row without getting bored! What a great round up. I love to eat meat but since I usually eat for lunch and dinner I try not to eat it at breakfast. I am not a huge sausage eater but bacon and I have a great relationship. Thanks for some veggie alternatives!

Great roundup! It’s a lot easier to get your veggies in the rest of the day if you have some at breakfast, and it gets the day off to a healthy start. 🙂 When I have a healthy breakfast, it usually makes my food choices throughout the day a little better. I need to try some of these recipes ASAP!

The great thing about most of these recipes is that they could be made ahead of time and easily frozen and reheated for when you want them!
