Here I am, yet again with another recipe featuring siggi’s yogurt. If you couldn’t tell, I had a little too much fun coming up with recipes for this contest and couldn’t choose just one…or two… to submit. With their simple ingredients, not a lot of sugar and a bunch of protein, there are so many ways to use siggi’s yogurt to make healthier dishes! The best part is, you don’t have to add a million other ingredients to your recipes when using siggi’s yogurt because there is already so much flavor in the yogurt itself!
If you are unfamiliar with siggi’s dairy then I will catch you up. siggi’s yogurt is an Icelandic style skyr yogurt. Each of their products stays true to their philosophy of simple ingredients and not a lot of sugar. They have some traditional, as well as unique flavors, which I love! I am a fan. Another cool thing: Siggi is an actual person who started out by simply wanting to make a yogurt that was more like what he ate as a child in Iceland (thicker, creamier, less sweet). Fast forward to today and he has refined his recipe and shares the yummy results with all of us! You can read more about his story here.
My other two recipes (blueberry pie cheese ball and creamy orange bars) for this contest have been dessert recipes, so I wanted to switch gears for this one. At most family gatherings on my husbands side, especially around Thanksgiving and Christmas time, broccoli salad is served.
Everyone loves a good broccoli salad! The downfall is, broccoli is healthy but many of the other ingredients that make the salad oh-so-good are not oh-so-good-for-you. The sauce is often made with mayonnaise and a bunch of added sugar. So, if you love broccoli salad but want to make it a little more waist-line friendly, then this is the recipe for you!
This healthier version of Broccoli Apple Salad packs a great mix of flavors with every bite! Instead of using a mayo and sugar packed sauce, I lightened it up by using siggi’s vanilla yogurt and only 1 Tablespoon of sugar. Red wine vinegar adds a zing to the sauce, while also serving a double purpose to keep the apples from turning brown. All of the other sweetness comes from the apples, dried cranberries and raisins.
Besides the great nutritional profile, it only takes 3 steps and this recipe is complete! Chop your onion, broccoli and apple, place them in a bowl along with your dried cranberries, golden raisins and sliced almonds, set aside. Whisk the yogurt, sugar and red wine vinegar together, pour it over the broccoli mixture and stir until everything is evenly coated.
Cover the bowl and place it in the refrigerator for up to 4 hours (this gives the flavors a chance to marinate and blend together). When you’re ready, take it out and serve it up! This is a great way to add some fruit and vegetables to your family parties!

Ingredients
- 1– 5.3 ounce container of siggi’s vanilla yogurt
- 1 Tablespoon red wine vinegar
- 1 Tablespoon sugar
- 1/4 – 1/2 medium red onion, chopped
- 1 crown broccoli, chopped (about 3 cups)
- 1 apple, peeled and chopped
- 1/2 cup dried cranberries
- 1/2 cup golden raisins
- 1/4 cup sliced almonds
Instructions
- In a medium bowl, whisk together the yogurt, vinegar and sugar.
- Add in the remaining ingredients; stir until evenly coated. Place in the refrigerator for up to 4 hours to allow for the flavors to blend together.
- Serve chilled. Store covered or in an air tight container for up to 5 days.
