Description

These Loaded Potato Latkes are a great way to use up leftover mashed potatoes and transform them into a delicious new side dish!

Ingredients

  • 3 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced green onion
  • 1/4 cup real bacon bits
  • 1 egg, lightly beaten
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Toppings:

  • sour cream or plain Greek yogurt
  • extra diced green onion
  • extra real bacon bits

Instructions

  1. Preheat skillet or griddle to medium heat. Place all the ingredients in a medium bowl, stir to combine.
  2. Spray skillet with non-stick cooking spray. Taking heaping spoonfuls of the potato mixture at a time (about 1/4 cup), place each spoonful on the skillet and smash down so it is flat. Cook one one side until it is golden brown, about 3 minutes. Flip over and cook on the other side until golden, approximately an additional 2-3 minutes. Continue until all the mixture is gone.
  3. Remove from the skillet. Serve topped with sour cream or plain Greek yogurt and extra chopped green onion and real bacon bits. Add extra salt and pepper, if desired.
