Description

Easy and delicious, this Pressure Cooker Peanut Butter Banana Steel Cut Oats is a hot breakfast the whole family will love!

Ingredients

  • 1 cup steel cut oats
  • 1 3/4 cups water
  • 1 1/2 cups milk
  • 1/2 cup peanut butter powder
  • 2 Tablespoons pure maple syrup (or sweetener of choice)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 medium bananas, sliced

Instructions

  1. Place all ingredients except banana into pressure cooker and mix until combined.
  2. Cook on high for 10 minutes. When the timer is done, quick release the pressure. When the pressure is fully released, remove the lid and stir in the sliced banana.
  3. Let sit uncovered a few minutes, to allow for thickening to desired consistency.
  4. If desired, sprinkle with additional cinnamon and stir in additional milk or sweetener after serving.
  5. To store, keep covered in the fridge for up to 5 days. The oatmeal will set up and thicken in the fridge. To make more creamy, simply stir in some milk until it reaches your desired consistency.

Notes

*If you don’t have peanut butter powder, you can substitute for natural creamy peanut butter, and decrease water by 1/4 cup.
