I have a sweet tooth, I won’t deny it. That doesn’t mean I don’t love stuffing my face with good old veggies – I do! But this dietitian won’t shy away from a treat every now and then. In my kitchen, I am often looking for different ways to satisfy my sweet tooth in healthier ways. Fruit & yogurt parfaits, roasted fruit, energy bites and more make regular appearances in my kitchen.
That’s why I was pretty excited when I heard about the latest recipe contest for The Recipe ReDux featuring SPLENDA® Naturals Sugar & Stevia Blend. It is made from only 2 non-GMO ingredients: stevia & cane sugar and is a great way to satisfy your sweet tooth with fewer calories (50% fewer calories than sugar).
You can use SPLENDA® Naturals Sugar & Stevia Blend anywhere you would use sugar. A 1/2 teaspoon gives you the same amount of sweetness as a full teaspoon of traditional sugar. There’s no artificial ingredients or added flavors, and, no bitter aftertaste. It gets its unique sweetness from Reb D, one of the tastiest parts of the stevia leaf.
Now I know what your thinking – Why is SPLENDA® Naturals Sugar Stevia Sweetener Blend considered natural? People interpret the term “natural” in many different ways, as there is no defined regulation for this verbiage. For the makers at the SPLENDA® Brand, natural means using non-GMO ingredients that are subjected to minimal processing to ensure quality, consistency, safety, and great taste, with no added artificial flavors, no added colors, and no artificial ingredients. This coconut chia pudding recipe sure is DELICIOUS! I could have eaten the whole bowl, but I practiced intuitive eating and didn’t. 😉 I love that I can have 50% fewer calories from the sugar and still enjoy the sweetness in this pudding. It is super easy to make – simply whisk the main ingredients together and let it set until thickened. I like it to set for 2-3 hours (or overnight), but even letting it set 10 minutes works fine. It just depends how hungry I am for it.
Then top with your choice of fresh berries or other fruit, and dig in!
You are only 5 ingredients away from this deliciousness. Just looking at these pictures makes me want more! See in the recipe video below how simple it is to make this coconut chia pudding.
