Description

This protein packed, low sugar Chocolate Chip Zucchini Bread made with Kodiak Cakes mix is the perfect way to satisfy your sweet tooth in a healthier way!

Ingredients

  • 2 eggs
  • 1/2 cup nonfat plain Greek yogurt
  • 1/2 cup unsweetened apple sauce
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups Kodiak Cakes Power Cakes Flapjack and Waffle Mix
  • 1/41/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1/2 cup dark chocolate chips
  • 1 1/2 cups grated zucchini

Instructions

  1. Preheat oven to 350° F. Spray a 9X5-in loaf pan with nonstick cooking spray.
  2. In a medium bowl, whisk together the eggs, Greek yogurt, apple sauce and vanilla extract; set aside.
  3. In a large bowl, combine the Kodiak Cakes mix, brown sugar (if using), cinnamon, nuts and chocolate chips until just moistened. Gently fold in the grated zucchini.
  4. Pour into prepared loaf pan. Sprinkle additional chocolate chips and chopped nuts on top, if desired.
  5. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean. Enjoy!

Notes

Nutrition info is calculated without the added 1/4 cup brown sugar.

You could substitute in vanilla Greek yogurt (instead of plain) for more flavor, if desired.
