Ingredients
- 1 1/2 lbs potatoes, peeled and diced
1 large onion, diced
1 quart (4 cups) water
1/4 cup unsalted butter
3 Tablespoons flour
1/2 cup milk
1 1/2 cups shredded cheese
1/2 tsp season salt
1/4 tsp paprika - 1/4 tsp salt
1/8 tsp ground pepper
chopped chives, for garnish
Instructions
- Combine potatoes, onion, and water in heavy sauce pan. Bring to boil. Reduce heat and simmer until tender, about 20 minutes.
- Meanwhile, in a heavy skillet melt the butter. Once melted, whisk in the flour. Cook and stir until the mixture bubbles. Reduce heat and stir in milk. Continue cooking and stirring until thickened.
- Add the butter/flour mixture slowly into the potatoes. Cook and stir until slightly thickened. Add in the cheese and seasonings.
- Serve topped with chopped chives. Season with additional salt and pepper, as desired.
