This year in our garden we were fortunate enough to have a pretty good year, minus a few crops that didn't do as well as we'd hoped. One crop that did really well this year was our carrots.
I love garden carrots - the earthy smell, the crisp crunch when you bite into them, and the fresh taste that no store bought carrots can replicate.
Since I had so many carrots, I decided to share a new carrot recipe with all of you. I chose something simple, yet SO delicious - Honey Garlic Roasted Carrots.
Sweet and Savory Honey Garlic Roasted Carrots Share on XIf you don't have garden carrots, you can totally use store bought carrots. Even some baby carrots would be an excellent option in this recipe, and would cut down on prep time!
After chopping up your carrots (or dumping your baby carrots out of the bag), whisk together a dressing of olive oil, honey, garlic, salt and pepper. It really doesn't get any easier than that.
Pour it over your carrots and toss it all together, then roast in the oven. I like to turn the carrots once during baking, so they cook evenly on all sides.
Once they come out of the oven your kitchen will be smelling delicious. Let them cool slightly, then dig in! You can serve these honey garlic roasted carrots as a side dish to any meal. They would be really yummy as part of a power bowl recipe, too.

Ingredients
- 2 lbs carrots
- 2 Tablespoons olive oil (or avocado oil)
- 3 Tablespoons honey
- 4 garlic cloves, minced
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
Instructions
- Preheat oven to 425°F. Line a sheet pan with a silicone baking mat or aluminum foil; set aside.
- Wash, peel (if desired) and cut carrots into 1 ½-inch sticks. Spread out onto the prepared sheet pan.
- In a small bowl, whisk together the olive oil, honey, minced garlic, salt and pepper. Drizzle over the carrots and gently toss to evenly coat.
- Place in the oven and bake for 20-25 minutes, or until the carrots are tender, turning once during baking.
